Add option to hide email/organization name from UI

When doing screen recordings or presentations, the email address and organization name are visible in both the welcome screen and the status line (e.g., "user@example.com's Organization").

It would be helpful to have a setting to hide or redact this information for privacy.

Current behavior:

• Welcome screen shows: <email>'s Organization
• Status line shows: <email>'s Organization

Requested behavior:

• A configuration option (e.g., hide_account_info: true or similar) that redacts or omits the email/org name from the UI.
