Feature request: Option to hide email/organization name in welcome screen

Question

The welcome screen displays the user's email address (e.g., `***@gmail.com's Organization`). It would be nice to have a setting to hide or mask this for privacy reasons.

For example, a configuration option in `settings.json` like:

```json
{
  "hideOrganizationEmail": true
}
```

**Use case:** When screen sharing or recording demos, the email address is visible to others.
