[Feature Request] Allow model selection per execution mode with mode-specific defaults

Bug Description
I wish we could tie a model to an execution mode. For example, I would love the plan tool to default to using Opus, and the build tool to default to using Sonnet. These can changed by the user, but would default based on the mode. This is similar to how OpenCode works.
