[Feature Request] Add persistent MCP server configuration override mechanism for plugins

Bug Description
Plugins do not offer a way to modify mcp server configuration unless the user is willing to edit the cache folder json that will be obliterated every time the plugin is updated. This is less a "plugin" and more a ephemeral shareware. I can't believe configuration can't be customized, without forking the entire plugin and marketplace, this is insane.
