If we disable auto updates can we still apply updates?

I want to disable auto updates as I really enjoy using it and don’t want something to change. However I’d still like to be able to update a day or so after the new release.

Is it possible to manually update after turning off automatic updates?

I only ask because I know it’s in limited preview and don’t want to fully cut off access to updates.
