[FEATURE] Tag your auto-updates into "stable" or "latest"

Problem Statement

I don't want to disable auto-updates, however, since things break and we've given "caution" notes in the logs/recommendations. Sadly, I don't notice them until after-the-fact.

Proposed Solution

How about supporting a "stable" and "latest" tag that can be configurable in the settings.json to only auto-update the release based on the assigned tag.
